The Recipe

Ingredients:

  • 4 Tomatoes (I used Roma, but use what you have)
  • 1/4 White or Red Onion
  • 1-2 Cloves Garlic
  • Handful of Basil (12-16 Leaves – I used Opal Basil, but the classic Green Basil works too!)
  • 2 Tbsp Olive Oil
  • Couple Pinches Salt
  • Pinch of Pepper
Possible Garnishes:
  • Balsamic Vinegar or Glaze
  • Chili Flakes
  • Hemp Seeds
  • Microgreens
  • Parmesan
Pair With:
  • Baguette Crostini
  • Toast
  • Chips
  • Crackers
Note: If you’re not a fan of the spice from fresh garlic. Prepare the bruschetta ahead of time and store for a day. The salt and acidity from the tomatoes will break down the garlic.
Classic Bruschetta

Step 1

  • Mince a 1/4 of an onion and 1-2 cloves of garlic.
  • Place in a mixing bowl or container.

Step 2

  • Dice up your tomatoes. I cut mine a little chunkier for a rustic look. You can cut them smaller based on your preferences. A smaller dice would also be easier for chips or crackers. 
  • Add to the bowl.

Step 3

  • Tear up the basil leaves by hand and add them to the bowl. You can roughly chop them up as well.

Tip: Tearing the leaves by hand reduces the bruising on the leaves and helps them retain a more fresh flavor.

Step 4

  • Add in 2 Tbsp of Olive oil.
  • Add a couple pinches of salt.
  • Add a pinch of pepper.

Step 5

  • Mix all the ingredients together.
  • Taste for seasoning.
  • Adjust as needed.
Classic Bruschetta

Final Step!

  • Store the Bruschetta in the fridge until serving.
  • Serve on fresh baguette crostini, toast, or with chips or crackers.
  • Garnish with a balsamic glaze for some sweetness. Or with some hemp seeps or microgreens for some added nutrition.
