Sticky Hoisin Stir-Fry

This sweet, salty, crunchy and perfectly spiced dish is a quick and easy recipe that's packed with flavour and nutrition. It makes for a great addition to meal prep as well with protein from tofu, broccoli and edamame. Plus some healthy fats from peanuts, sesame seeds, and my favorite ingredient, hemp seeds!

TIME TO COOK

The Recipe

Ingredients:

  • 1/2 Pack of Tofu (227g)
  • 1/2 Cup Edamame Beans (or Peas)
  • 1/2 Med Onion
  • 1/2 Head of Broccoli
  • 1/2 Thumb of Ginger (14g)
  • 2-3 Cloves of Garlic
  • 1/4 Cup Chopped Peanuts (Preferably Roasted – Can also be substituted with Cashews or Almonds)
  • 1 Tsp Oil
  • Pinch of Pepper
  • Salt
Stir-Fry Sauce:
  • 2 Tbsp Water
  • 2 Tsp Soy Sauce (Or Tamari)
  • 2 Tbsp Hoisin Sauce
  • 1/2 Tsp Rice Vinegar
  • 2 Tsp Sriracha
  • 1/2 Tsp White Sesame
  • 1/2 Tsp Black Sesame (Or Another 1/2 Tsp White Sesame)
  • Pinch of Cinnamon (Approx. 1/16 Tsp)
Garnish:
  • 4-5 Springs Cilantro
  • Chopped Peanuts
  • Sliced Red Chili
  • Hemp Seeds (Optional – For Added Protein and Omegas)

Step 1

  • If you don’t have leftover rice, quinoa or noodles. Get that started first according to the instructions on the package so that it will be good to go when we’re done the stir-fry. The stir-fry is good straight too so all good if you’re skipping the carbs! 
 

Step 2

  • Place a non-stick wok/pan on med-high heat on the stove.
  • Add 1 Tsp of Oil
  • Chop the tofu into symmetrical cubes.

Step 3

  • Once the wok/pan has heated up, toss the tofu in.
  • Add a pinch of salt and pepper
  • Toss and allow the tofu to begin crisping.
  • Toss or flip the tofu until in become nice crispy and golden.

Chop, Chop, Chop It Up!

Step 4: Cutting Carrot Sticks/Batons

I like cutting my carrots into sticks/batons for stir-frys, pickling, salads and other recipes. Feel free to cut them however you’d like for the stir-fry, but below are the steps to my technique:

  • Peel the carrot and cut it into even pieces to the length you’d like your sticks.
  • Next, slice one side of the carrot pieces lengthwise. 
  • Roll the piece of carrot onto the cut side. This will prevent it from rolling during the next step.
  • Then, cut the carrot into slices length wise so you’re left with rectangular type pieces.
  • Stack the rectangular pieces and cut them length wise.
  • There you have it! Awesome carrot sticks, cause circles suck. Kidding, I eat circles too.
  • Set aside and go on to the next step – Don’t forget to toss those tofu chunks!

Step 5

  • Chop 1/2 a medium onion into thin length wise slices.
  • Mince 2-3 cloves of garlic and the 1/2 thumb of ginger.
  • Once the tofu has crisped up (see picture), add all the chopped ingredients, including the carrots, into the wok/pan.
  • Add 1/4 cup of chopped peanuts.
  • Add a pinch of salt.
  •  Toss all the ingredients together and allow to cook for 2-3mins.

Step 6

  • Once the chopped ingredients have cooked a little, add in 1/2 cup of edamame beans (or peas) and give everything a toss. Let cook 1-2mins.
Note: If you like your broccoli a little softer and more cooked add it in this step as well. If you prefer your broccoli a little crunchier and to have a bite like me, carry on!

Step 7:

  • Chop up the 1/2 head of broccoli into your desired size.
  • Combine all the stir-fry sauce ingredients in a little ramakin or bowl.

Step 8:

  • Add the broccoli to the wok/pan.
  • Pour the sauce over all the ingredients and toss everything together.
  • Remove from heat and cover with a lid.
  • Let sit for 3-4mins.
  • Taste for seasoning. 
  • Add salt if needed.

Final Step!

  • Place some rice, quinoa or noodles in a bowl or plate.
  • Scoop some of the sticky hoisin stir-fry into the bowl.
  • Garnish with chopped nuts and/or hemp seeds (optional).
  • Garnish with chopped cilantro.
  • Add thinly sliced chilis for some extra punch!
  • Wow… look at that beautiful plate of protein loaded goodness you just made. Tearing up thinking about how awesome you are! 😉
