MEXICAN INSPIRED TOFU SCRAMBLE

Mexican Inspired Tofu Scramble

This meal is awesome for breakfast and I always make some extra for meal prepping. It's great to have on hand to make a quick wrap, sandwich or throw into a salad or stir-fry. Inspired by Mexican flavours, this dish packs a punch of freshness and spices. Using tofu also makes this meal low in fat and high in protein. I hope you love it as much as I do!

Tofu Scramble

The Recipe

Ingredients:

  •  454g Medium Firm Tofu (Usually 1 Pack)
  • 3-4 Cloves Garlic – Chopped
  • 1 Thumb Sized Piece of Ginger – Chopped
  • 1/4 of an Onion – Chopped
  • 1/4 Cup Corn
  • 1/2 of a Jalapeno – Chopped (Spicy!) 
  • 1 Tsp Oil of Choice
  • Spice Blend #1
    • 1/4 Tsp – Salt (Or to taste)
    • 1/4 Tsp – Sugar
    • 1/4 Tsp – Coriander Seed Powder
    • 1/2 Tsp – Turmeric Powder
    • 1/2 Tsp – Cumin
    • 1/4 Tsp – Chipotle Chili Powder (Optional – Adds extra spice and a smoky flavor)
    • 1 1/2 Tsp – Dried Oregano
    • Pinch of Black Pepper
  • Spice Blend #2
    • 1/4 Tsp – Salt (Or to Taste)
    • 1/2 Tsp – Dried Oregano
    • 1/8 Tsp – Cinnamon Powder
  • Sauce Blend
    • 1 1/2 Tsp – Soy Sauce
    • 1 1/2 Tsp – Mushroom Sauce (Can substitute with another 1/2 tsp soy sauce)
  • Cilantro – Handful, chopped for garnish

Note: To make the recipe quicker you can combine the spice blends. Adding them separately allows us to infuse flavors throughout cooking.

Step 1:

  • Place a non-stick pan on high heat and add 1 tsp oil of choice.
  • Open the package of tofu, drain the liquid and place tofu on cutting board or in a bowl.
  • Using a fork or clean hands break up the tofu into a scramble looking consistency.

Step 2:

  •  Once the pan and oil are hot, add scrambled tofu (be careful adding to hot oil as the tofu may spatter due to still containing moisture)
  • Add Spice Blend #1 (and #2 if you’re looking to speed things up)
  •  Mix everything together and let it cook until the water in the tofu is cooked out and the tofu begins to develop a golden crust- approximately 5 minutes (see image in Step 4 for color and texture).

Step 3:

  •  While the tofu is cooking and mingling with all the delicious spices, chop the garlic, ginger, onion and jalapeno into small pieces.

Step 4:

  •  Once the water from the tofu has cooked out and it begins to develop areas of golden crust, add the chopped garlic, ginger, onion, jalapeno and the corn.
  • Also add Spice Blend #2 and the Sauce Blend
  • Stir together, reduce the heat on the stove to med-low and cover with a lid. This will seal in all the flavors coming out of the garlic, ginger, onion, jalapeno and corn and allow them to be absorbed by the tofu. 
  • Cook for another 5 minutes. Mix 2-3 times throughout.

Final Step!

  • Remove lid. Give a final stir.
  • Taste for seasoning. Add salt to taste if necessary.
  • Serve in plate or bowl. 
  • Garnish with cilantro and add a little lime for freshness.
