There is nothing more comforting than the aroma of fresh bread baking in the air. The excitement of cutting that first slice and having that first warm bite of fluffy goodness. Oooo... gives me the feels just thinking about it. No doubt this recipe hits the spot! Not only is it quick, easy and super satisfying. Its also loaded with flavours from oregano, thyme, garlic, and chili that really take this focaccia to the next level. 

Serve with some balsamic and olive oil or some dip as an appetizer. Great for family dinners, Thanksgiving and Christmas!

TIME TO COOK

The Recipe

Ingredients:

  • 3 Cups Flour (I used 1 1/2 Cups White Flour & 1 1/2 Cups Whole Wheat – Use whatever you have in the pantry.)
  • 2 Cups Spinach – Chopped
  • 3-4 Cloves Garlic
  • 1 Tsp Salt
  • 1 Tsp Sugar
  • 1 Tsp Thyme
  • 2 Tsp Oregano
  • 1 Pinch of Black Pepper
  • 1 Tsp Chili Flakes (Optional)
  • 1 Tbsp Yeast
  • 3 Tbsp Olive Oil
  • 1 1/2 Cups Warm Water + 1 Tbsp If Needed (Details in Step 4)
Garnish: Use whatever you’d like! Below is what I’ve used
  • 1/4 Onion Sliced Long & Thin
  • 1/3 Cup Olives
  • Oregano
  • Other Topping Ideas:
    • Cheese – Feta, Parmesan, Mozzarella
    • Garlic Slices
    • Rosemary
    • Jalapeno

Step 1

  • Add the following ingredients to a mixing bowl and whisk together:
    • 3 Cups Flour
    • 1 Tsp Salt
    • 1 Tsp Sugar
    • 1 Tsp Thyme
    • 2 Tsp Oregano
    • 1 Pinch of Black Pepper
    • 1 Tbsp Yeast
    • 1 Tsp Chili Flakes (Optional)

Step 2

  • After whisking the dry ingredients finely chop the garlic.
  • Chop the spinach.
  • Add to the mixing bowl

Step 3

  • Add the following wet ingredients to the mixing bowl:
    • 3 Tbsp Olive Oil
    • 1 1/2 Cups Warm Water
  • Roughly mix all the ingredients together using a spatula or clean hands.

Step 4

  • After you’ve roughly mixed the ingredients together, knead the dough for 3-5 mins, either in the bowl or on a clean surface.
  • Use 1 Tbsp of Warm Water if needed (see note below)
 
Note: The dough should feel light and soft, not dense and hard. The amount of ingredients in the recipe should give you the perfect dough, however, if the dough feels dense and dry add some extra water. Little by little. The key to a good dough is to use less flour and allow the dough to remain moist. 
On the other hand if your dough is wet and super sticky, allow it to rest for a little while and then come back and work with it again. The flour should absorb some of the moisture and make the dough more workable. If extra flour is needed add only a little at a time.

Step 5

  • Brush the base of a baking tray or casserole tray with some olive oil.
  • Place the dough in the tray and spread into a rectangle using your hands.
  • The dough should be about 1/2 inch to 1 inch thick.
  • Cover with a damp towel.
  • Let rise for 15-20 mins.

Step 6:

  • As the dough is rising, prepare your toppings.
  • After the dough has risen for 10-15 mins, preheat your oven for 450°F

Step 7:

  • After your dough is done rising, remove the damp towel.
  • Punch down the dough with your fingers to create craters in the surface.
  • Brush on some olive oil.
  • Add the sliced onions, black olives, and oregano (Or whatever toppings you’re using)
  • Place in the oven for 15-25 mins (until the surface is golden brown).

Final Step!

  • If the surface of the bread is golden brown the bread is done!
  • Allow to rest for 5-10 mins (I usually can’t wait and just cut piece of that fluffy loaf right off)
  • Slice into lengthwise pieces.
  • Serve with olive oil and balsamic, some soup, chili or anything else!
  • Wow, that bread looks epic! They should really call you Betty Crocker with skills like that 😉
